Inspired by Fall in Love (Figgy Remix) | Phantogram
I came across this recipe when I went to a dining experience @ The Office, the latest underground table d’hôte that Paris has to offer. It’s an incredibly easy and delicious recipe with which I totally fell in love with. It really reminds me of a strawberry soup my mother used to make, so yeah, blame it on childhood memories!
This recipe was adapted by Emilie Suzanne who is behind The Office project. I liked it so much I asked her to share it with us and here it is.

_ 40g of icing sugar
_ 500g of strawberries
_ 100ml of single cream
_ 100g of mascarpone
_ 30g of icing sugar
_ 1 vanilla bean

This is so quick & easy you’ll wonder why not make it several times a week!
First clean the strawberries then blend them with the icing sugar and leave it to cool. Then whisk together the mascarpone, the single cream, the icing sugar and the grated vanilla bean (cut it in half and use the tip of the knife to remove everything that’s inside). The cream has to be quite firm as that is what is going to make this desert an interesting one : to have the contrast between the liquid soup and the creamy consistency of the Mascarpone-Vanilla cream.
